Sweet Apulian Traditions
Pastry chefs arrange scarcelle, traditional Apulian pastries made during the Easter season, in the bakery at Pasticceria Barese in Molfetta, Italy, on April 1, 2026. Scarcelle, also known as scarcedde, are prepared during Holy Week using a simple shortcrust pastry and hard-boiled eggs as a symbol of rebirth. They are often decorated with icing and colorful sprinkles, taking on traditional shapes such as doves, bunnies, hearts, or the classic doughnut, representing an ancient peasant tradition of abundance.
