Potato sprouts grow from dormant ''eyes'' on a potato tuber under favorable conditions such as light, warmth, and moisture. These shoots can be planted to produce new potatoes. Sprouted potatoes may contain elevated levels of the toxin solanine, which can cause nausea, vomiting, diarrhea, headaches, confusion, low blood pressure, and, in severe cases, neurological issues or death if consumed in large amounts.
