Cauliflower is currently being cultivated as one of the vegetables from the species Brassica oleracea in the genus Brassica, which is part of the Brassicaceae (or mustard) family. This annual plant is reproducing by seed, and its typically white head is made up of an inflorescence meristem. The heads of cauliflower are similar to those of broccoli, but the edible portion of broccoli consists of flower buds. Usually, only the head of the cauliflower is consumed, and the edible white flesh is often called ''curd.'' Cauliflower is nutritionally excellent, high in vitamins C and K, and a good source of folate, which is essential for cell growth and particularly important during pregnancy. It is fat-free, cholesterol-free, and low in sodium. A one-cup serving has only 25 calories, 5 grams of carbohydrates, and 2 grams of dietary fiber. For optimal growth, cauliflower needs a cool, moist climate and deep, well-drained soil with a pH between 5.5 and 6.6. It is grown in the plains from September to February.
