Gachees are collecting juice by peeling the bark at the top of the tree and tying an earthen pot below near Kolkata City, India, on Monday, January 30th, 2023. Khejur gur, which is jaggery extracted from date palm trees, is a winter treat in the eastern Indian state of West Bengal.
