Its Leaves Are A Common Edible Vegetable High In Nutrients And Antioxidants Consumed Either Fresh, Or After Storage Using Preservation Techniques By Canning, Freezing, Or Dehydration. It May Be Eaten Cooked Or Raw, And The Taste Differs Considerably; The High Oxalate Content May Be Reduced By Steaming. Spinach Is A Member Of The Amaranth Family. Spinach Is High In Vitamins A, C, And K, As Well As Minerals Like Iron And Calcium Benefit Skin, Hair, And Bone Health. It Is Also Low In Calories And Carbohydrates, And High In Dietary Fiber. The Possible Health Benefits Of Consuming Spinach Include Improving Blood Glucose Control In People With Diabetes, Lowering The Risk Of Cancer, And Improving Bone Health.
