According to a survey conducted by Aibi-Cerved, 85% of the bread purchased in Italy is fresh artisan bread with an average production of about 1.5 million tons per year and a daily per capita consumption of 80 grams. During the weeks of the lockdown, Aibi estimates confirm that bread purchased mainly in local shops and bakeries has increased its presence at the table by 10%, returning to the levels of consumption of a decade ago.
