Indian Food - Mutton Curry - Goat Curry

Mutton Curry (also referred to as Kosha Mangsho, or Goat Curry) is a dish that is being prepared from goat meat and vegetables. The dish is being found in different variations across all states, countries, and regions of the Indian subcontinent and the Caribbean. The Mutton Curry is originally being prepared by putting all the ingredients together in a pot and slow cooking the whole curry by a wood fire in a clay oven. Today, it is being cooked using pressure cookers and slow cookers after briefly sautéing all the ingredients and spices in a wok. The steadily cooked mutton is becoming more tender than the normally cooked mutton. Mutton Curry is generally being served with rice or with Indian breads, such as naan or parotta. The dish can also be served with ragi, a cereal. Common ingredients used to prepare Mutton Curry include mutton or goat meat, salt, turmeric powder, mustard oil, ginger garlic paste, dahi (yogurt), an assortment of spices, onion, chili, tomato, and coriander leaves. 'Kosha Mangsho' is the Bengali version of Mutton Curry, and it is being cooked in Tehatta, West Bengal, India, on July 29, 2024. (Photo by Soumyabrata Roy/NurPhoto)
