The gastronomy of the region Southeast of Brazil, which is composed of the States of Rio de Janeiro, Minas Gerais, São Paulo and Espírito Santo, received great influence of indigenous cuisine and also of the colonizers from Portugal and Spain. The slaves from Africa, also brought their influence to the local food culture.
