Cutting Of Squash Blossoms In Mexico City Begins
Luis Ortega, a farmer and arts student, collects squash blossoms on a plot of land located near the La Estancia and Xaltepec Volcano mines in the Tláhuac district of Mexico City, during the COVID-19 health emergency and the yellow epidemiological traffic light in the capital. The yellow-orange pigment characteristic of the squash blossom indicates that it contains flavonoids, compounds that function as antioxidants, which inhibit the oxidation of the bad cholesterol that clogs arteries in the human body.
